this tart drink is a surprising and complex take on a tom collins! our cedar rosemary syrup doubles down on herbal gin notes, and the olives are a surprising and welcome briney complement. feel free to replace the gin with your favourite non-alcoholic alternative, or replace both the gin and tonic with a juniper flavoured soda.
1 oz cedar rosemary syrup
2 oz gin
2 oz lime juice
1 oz elderflower tonic water
castelvetrano olives for garnish
- Shake syrup, gin, and lime juice in a shaker tin with ice.
- Strain into chilled glass and top with tonic water.
- Garnish with olives.
